Corned Beef and Sauerkraut Grilled Cheese Sandwich Recipe

This grilled cheese sandwich is a tasty take on the traditional Reuben sandwich. Corned beef, sauerkraut, and Swiss cheese combine to make a tangy and savory sandwich that is ideal for lunch or dinner.

  • Cook Time: 10 minutes
  • Total Time: 20 minutes

Instructions

  • Preheat a griddle or skillet over medium heat.
  • On each slice of rye bread, spread 1 tablespoon thousand island dressing.
  • Layer one slice of bread with two slices of Swiss cheese, four ounces of corned beef, and a quarter cup of sauerkraut.
  • Place the other slice of bread on top.
  • 1 tablespoon of butter should be spread on the top slice of bread.
  • Place the sandwich on the preheated skillet or griddle, butter side down.
  • On the other side of the bread, spread the remaining tablespoon of butter.
  • Cook for 3-4 minutes, or until the bread has turned golden brown and the cheese has melted.
  • Cook for an additional 3-4 minutes, or until the other side is golden brown and the cheese is melted.
  • Allow the sandwich to cool for 1-2 minutes in the skillet or griddle before serving.
