- Preheat a nonstick skillet to medium-high heat.
- Each slice of bread should be brushed with butter on one side.
- In the skillet, place two slices of bread, butter side down.
- In the skillet, place a slice of vegan cheese on each slice of bread.
- On top of the cheese, arrange the sliced onion and tomato.
- Season with salt and pepper to taste.
- On top of the vegetables, place another slice of vegan cheese.
- Place the remaining two slices of bread on top of the cheese, butter side up.
- Gently press down on the sandwich with a spatula.
- 3-4 minutes, or until the bottom slice of bread is golden brown.
